Kevin heads up our barrel aging program. In addition to researching, planning and brewing rich, dark stouts and porters to age in barrels – he comes in here every couple of weeks to check the progress. You might say he’s babysitting the barrels. It’s cool to watch for a couple of reasons: #1 – in order to pull a sample, he sanitizes the hole with an alcohol spray and flame prior to pulling out the nail to draw a taste. It feels medieval and looks magical like some wizardry is at hand. Considering barrel aging is a practice that has been done for literally thousands of years…it looks the part. #2 – Kevin is in his happy place in the barrel aging room. He’s extracting samples, considering blending options, documenting humidity levels and just overall doing the beer science thing. In summary, he’s a happy beer science wizard.
