We are excited to introduce our new Guilty Party Sour series! Sour ales are “wildly” popular and we wanted to put our LRB creative twist to this ancient style of beer. There are several different styles of sour ales – each brewed intentionally with wild yeast and/or bacteria giving this ale a tart/sour taste. Because we don’t want all of our beers to be “sour”, we brew these ales on a separate 1 bbl brew system. With a balanced grain and hop recipe, we brew a 1 bbl batch of wort, ferment with our house ale yeast, and then we can add fruit along with the “souring” yeast. Sour ales can take 2 weeks or up to a year to achieve the level of mouth puckering flavor you want. We have sour ales that we quickly age in a 1 bbl brite tank and we also have LRB beers that we dosed with fruit, wild yeast, and bacteria that’s aging in oak barrels for several months. Both aging techniques will give a unique sour flavor profile. We hope you enjoy our sours and be on the look out for our oak aged sours to be bottled…. coming soon!
